LANGHE NAS-CËTTA FROM THE COMMUNE OF NOVELLO “PASINOT” DOC
Our challenge with the historical cru of Nas-cetta
The Pasinotti hill: the history of Nas-cëtta passes through here. We are on the southern side of the town of Novello, a few metres outside the production area of Barolo DOCG. An ambitious project to highlight the birthplace of Nascetta.


IN THE VINEYARD
Commune of Novello – Locality PasinottiAltitude: 350m above sea level
Soil: calcareous base with sandy infiltrations, perfect also for Nebbiolo
Vine: Nascetta (Nas-cëtta, as we say in Novello)
Planting density: 5,000 plants/hectare
Raising system: espalier with simple Guyot pruning
Year of planting: 2016
The area includes a “collection vineyard” consisting of about 750 grapevines obtained from the selection and multiplication of 29 old healthy plants, identified in three different vineyards in Novello (including the oldest one of Pasinotti, year 1948).

IN THE CELLAR
Crushing and destemmingCold pre-fermentative maceration and following soft pressing
Slow and regular fermentation in steel vats at 18°C
Aging on noble lees for at least 12 months before bottling
Maturation in bottle for at least 6 months before marketing

IN THE GLASS
Straw yellow color, with pleasant golden reflections; good intensity.Complex aromatic profile: hints of flowers, acacia honey, ripe exotic fruit, citrus fruits, aromatic herbs. Sometimes light sulphurous hints are picked up.
In the mouth it is savory, enveloping, with excellent structure and minerality: guarantees both persistence and personality and excellent evolution potential.
