Pasinot® – Langhe DOC Nas-cëtta del Comune di Novello

Our tribute to the historic cru of Nas-cëtta

The Pasinotti hill is where the story of Nas-cëtta begins. Located on the southern slope of Novello, just a few meters outside the Barolo DOCG production area, it is home to a small Nascetta vineyard planted in 1948—the oldest still existing and still productive today. An ambitious project designed to honour and enhance the cradle of this ancient variety.

With this label, Le Strette seeks to highlight Nas-cëtta’s natural ability—especially under specific soil and microclimatic conditions—to produce wines that are more structured, more complex and remarkably age-worthy.

In the Vineyard

  • Altitude: 330–360 m a.s.l.
  • Soil: calcareous marl with a moderately sandy, loose texture; also ideal for Nebbiolo
  • Variety: Nascetta (Nas-cëtta, as we say in Novello)
  • Vine density: 5,000 plants/ha
  • Training system: Guyot on vertical trellising
  • Planting years: 1948–2016

The vineyard area also includes a “collection vineyard” of about 750 vines, originating from the selection and propagation of 29 old, healthy mother plants, identified across three historic vineyards in Novello—including the original Pasinotti vines planted in 1948.

In the Cellar

  • Crushing and destemming
  • Cold pre-fermentation maceration followed by gentle pressing
  • Slow, steady fermentation in stainless steel at 18°C
  • Aging on fine lees for at least 12 months before bottling
  • Bottle aging for a minimum of 6 months prior to release

In the Glass

  • Color: straw yellow with good intensity, sometimes slightly deeper
  • Aroma: complex and layered, with notes of flowers, acacia honey, ripe exotic fruit, citrus and aromatic herbs. Occasionally, faint sulphurous hints may appear.
  • Palate: elegant and harmonious, with pleasant sapidity and excellent structure—qualities that ensure persistence, personality and strong aging potential.

Food Pairings

Ideal with cured meats, meat-based appetizers, vegetables and fish, richly flavored first courses and medium-aged cheeses.
